Starting summer with style…Uncommon Amsterdam, passionate about great taste in coffee, food and wine!
We are excited to share with you this month some delicious coffee, sourced with purpose and handled with care! If you ever find yourself in Amsterdam, then make your way to one of their spaces.

It has been a year since we last enjoyed your coffee in our subscriptions, how has the last 12 months been for you?
The last 12 months have been great, we’ve grown a lot and overall it was a positive and fun year. Opening our 2nd location was a huge task but something that’s been very rewarding and we’re so happy with the result. We opened a wild pastry and coffee bar, called Uncommon Bar, where we serve a big selection of our coffees as well as pastrys that we bake ourselves. We work with a forager in Amsterdam who collects ingredients that we use in the pastrys, so the flavours are seasonal and everchanging. We also opened for nights where we serve natural wines and tapas style plates. It’s also where we host our cuppings and events.

What is your outlook for the rest of this year?
We are putting a lot of energy and focus into hosting events at the bar, such as Uncommon Sessions, where we bring industry professionals in to speak about certain topics and create a space for dialogue. We are also hosting more tastings and cuppings and using the new bar as a space to bring the Amsterdam coffee community together.
Uncommon Sessions, please tell us a bit more.

We wanted to create a space where we can come together and talk openly about the coffee industry in general. Whether it’s about challenges, achievements, trends, basically anything that is worth talking about and sharing with the coffee community. Last week we had Angelica from La Palma y El Tucans Equation Coffee talking about regenerative agriculture and how they farm coffee, their soil regeneration program and more. It was super interesting and a topic we will do more on, as it’s something we really care about.
Food & Wine – you have some tasty looking posts! How are your tasting nights evolving, what do you enjoy most about this adventure?
Well food is something we’ve always done, we’ve had the café for as long as we’ve had the roastery. We are just passionate about hospitality in general and we really have the whole package now, we have a café, an espresso bar, a bakery, a wine bar and a restaurant all tied in together. The theme is the same across both our locations and the roastery though: to source ingredients from producers we align with and share their story in the best way we can.
How do you enjoy being part of your local coffee community?
I think having a local café makes it really easy to have a sense of community and we are lucky to be in such a beautiful city. There are a lot of great roasters and cafés here so the coffee community is really bubbling here. It’s great to be a part of.

Great selection of coffee for this month, please could you share some detail.
All 3 of these coffees are our ‘mainstayers’, coffees we buy every year and try to have on offer most of the time. They are all very high quality and all have both social and environmental programs behind them.
Kibingo - Burundi - Red Bourbon - Honey
Sourced through Greenco, this lot represents the work of over 1,700 smallholder farmers who deliver their cherry to the Kibingo washing station in Kayanza. Since beginning operations in 2015, Greenco has consistently excelled in Burundi’s Cup of Excellence competitions — a testament to the remarkable quality they help produce.
This particular lot is honey-processed and showcases a sweet, clean, and silky cup with a tannic black tea finish. Expect tasting notes of blackberry, lemon, and black tea.
Suke Quto - Ethiopia - Guji - Natural
A signature Ethiopian offering from Tesfaye of Suke Quto.
This vibrant and fruit-driven coffee is both Organic and Rainforest Alliance Certified, and its production helps fund the construction of schools in nearby villages. Grown with care by long-time partner Tesfaye, it delivers a juicy, berry-forward profile with notes of strawberry, blueberry, and rose.
San Ignacio - Peru - Washed
A sweet and rich organic coffee from the women of San Ignacio, Cajamarca.
Produced by 223 female farmers who make up the 'Cosecha de Mujer' group — part of the Prosperidad de Chirinos cooperative — this coffee represents a commitment to gender equality and the empowerment of women in coffee farming. The name, meaning harvest of women, reflects their mission to foster leadership and equity within their communities. Expect a cup with notes of dark chocolate, orange, and molasses.

We know how much work the producers have put into growing and processing these lots and we do our best to roast them in a way that highlights their work and does the coffee justice.
